Rice Pudding With Carrots

[ I did little experiment to rice pudding, of adding carrots, into it and it became really very tasty. Try it and you'll like it ]





Ingredients

  • 1/2 cup : Rice (soaked)
  • 5 cup : Milk
  • 250 ml : Double-cream
  • 1/2 cup : Sugar (or as per your taste)
  • 4 : Cardomon seeds
  • 1 tbsp : Kewra water
  • 4 medium : Carrots (grated)
  • 1 pinch : Salt


Directions:

  1. Soak the rice for at least one hour and then boil them with a pinch of salt until they become extra soft.
  2. Pour milk and grated carrots into the boiled rice and cook it for half an hour.
  3. Put sugar and cardamom seeds into it and cook for another 15 minutes.
  4. Then pour cream into it and cook for another 10 minutes. In the end put kewra water into it. 
  5. Place it in the fridge for few hours, as it's delicious if served cold.

Cooked Chana Chaat With Papri

[ It is slightly different from normal chana chaat as it is 'cooked' also. ]




Ingredients For Chana Chaat (Step 1)
  • 1 tin: Chick Peas (boiled)
  • 1 large: Potato (boiled, cut in cubes)
  • 2 small: Tomatoes
  • 2 small: Green chillies
  • 1 tsp: Red chilli-powder
  • 1 tsp: Salt
  • 2 tbsp: Dried tamarind
  • 2 tbsp: Fresh corriander
  • 1 medium: Onion (chopped)
  • 1 tbsp: Oil

Ingredients For Paapri (Step 2)
  • Half cup: Plain flour
  • 1 pinch : Salt
  • 1 pinch : Chilli powder
  • 1 tsp: Oil


Directions for step 1:
  1. Heat the oil and add chilli-powder and salt into it. 
  2. Add boiled chick peas into it and fry for two minutes. 
  3. Add onion and green chillies into it and fry this chick peas mixture for 1 minute.
  4. On the side, add tamarind into the boiling water and make a paste. And then add this tamarind paste into the chick peas mixture and stir it. 
  5. Further add tomatoes, potatoes, and fresh corriander into it and stir it for 1 minute. Garnish it with paapri and its ready to be served (after completing step 2).

Directions for step 2:

  1. Add all the ingredients, mentioned above, for step 2 and make a soft dough. 
  2. Flaten the dough with the rolling pin and cut them into any shape pieces. 
  3. Heat the oil and fry them. Serve them with chana chat.

Mango Delight (Personal Recipe)

Note: I like devising new recipes and 'Mango delight' dessert is one of my (and my sister's) invention :-) Those who tasted it really liked it - hope you'll like it too !




Ingredients:

  • 4 large mangoes (cut in cubes)
  • 500ml double cream
  • 1 large banana (cut in pieces)
  • 2 tsp coco-powder
  • 15 rich-tea biscuits (roughly crushed)
  • Sugar (as per taste)

Directions:

  1. Take a tray that has a good-looking shape and layer it with rich tea biscuits (you can use other similar simple biscuits of other brand). This is layer-1.
  2. Beat the double-cream with sugar and use half of it as a layer on top of the biscuits layer. This is layer-2.
  3. Use the cut cubes of mangoes (half-of the total quantity of mangoes) and the pieces of banana on to the layer-2. This is layer-3.
  4. Place the tray in the fridge for at least half-an-hour and let the layers settle and become hard.
  5. Mix coco-powder with about 3-tbsp of cream. Add one tsp of sugar to it. Layer this coco-mixture onto the layers in the tray. This is layer-4.
  6. Add another layer of (most of) the remaing double-cream onto it. This is layer-5.
  7. Next use the remaining half of the mango cubes as another layer on top of everything. This is layer-6.
  8. Finally decorate on the top using thin lines of double-cream and mixture of coco-powder.
  9. Place it into the fridge for 5 hours before serving. You are definetely going to impress all at home :-).

Tip: You can use melted chocolate instead of coco-powder !
