Avocado Feta Smash on Toast, step by step Recipe .

Avocado and feta mashed together with a little lime juice, pepper and salt. It really doesn't get simpler than this but this sandwich, which can either be served open-faced or otherwise, is a very popular brunch item in Australia. Although very good quality feta cheese was available in Sydney and avocados were fabulous when in season, I never made avocado feta smash for our weekend toast in my entire year in Australia.

I love cooking with avocado, especially after the doctor recommended a moderate portion of it in both TH's and my diet to bring up the levels of good cholesterol. We both love guacamole but I have found other ways to add avocados in our diet, including:

Avocados have more potassium than bananas and are very high in good fats and fibre, both of which are helpful for balancing your diet. Now, the marketer in me knows that a lot of this info has been forced on us to increase the sales and export of avocados but I liken this to how the coconut oil made a comeback in recent times and now there are so many recipes incorporating them, whereas generations of Malayalis (among others in South East Asia) always knew this and reaped the benefits. So yes, I am a fan of avocados and love its buttery texture and versatility.

After the move back to Singapore, I went in search of good avocado during one of my more nostalgic moments (in case you live in Singapore, the hard kind you see in Fairprice supermarket is a no-go for this recipe, or any avocado recipe for that matter). When picking avocados for a dish, make sure it gives in to gentle pressure and is a darker brown/black colour. Also, when picking out feta cheese to make this sandwich, make sure it's unflavoured. Fresh Greek feta works well or the one from Lemnos brand will do in a pinch too. Both lime or lemon juice work well but I personally prefer using lime juice.

AVOCADO FETA SMASH ON TOAST

Preparation time: 5 minutes
Cooking time: 8 minutes
Serves 2

INGREDIENTS:
1 ripe avocado
1/2 cup of feta cheese
1-2 tsp of lime or lemon juice
1/2 tsp of freshly cracked black pepper
1 tbsp of butter (optional), for the toast

INSTRUCTIONS:

Place the feta cheese in a bowl and crumble it until fine, with a fork or your fingers.

Cut open the avocado and scoop out the flesh. Add it to the feta cheese.

Add in the lime juice. I love the sourness of lime and always add more than required so use your judgement here.

Using a fork, smash the ingredients together thoroughly until well blended. The feta cheese tends to be quite salty so I didn't add any more but do a taste test and see if you'd like to add some salt to this. If not, set aside and prepare the toast.

Heat an iron or non-stick pan and thrown in some butter. This is optional, I didn't use any butter but it definitely tastes better if you do use some.

A few words on the bread I used. In Singapore, there are local coffee shops or Kopitiams that serve tea/coffee, soft boiled eggs, and toast with kaya butter. The bread they use for this toast is what I have used there. They are crustless, longer than normal, and incredibly soft. On toasting, they turn very crisp and really delicious.

If you don't have access to this, you can use any bread you have handy. Rye bread is said to taste great with avocado feta piled on as well.

Ok so toast the bread golden brown and then add as much topping as you'd like. Sprinkle black pepper on top, to taste.

You can serve these sandwiches open-faced or place another toasted slice of bread on top and go for it. A great brunch or breakfast item if you are looking to start your day on the right note.

Avocado Egg Salad Sandwich | Egg Sandwich Recipe | Sandwich Recipes

When I saw a lovely Avocado Egg Salad Sandwich recipe in Pinterest, I immediately pinned it to my Bookmarked Recipes board. Sandwiches are not mom-approved dinners for an Indian, I know. Or maybe it is for some of you but in my home, bread was bought when someone was sick, that someone mostly being my mom who doesn't want to cook or wants to serve some toast in the morning instead of the usual fare. Even during my school days, my tiffin box barely had sandwiches in them. It was usually idlis or mini dosas or maggi noodles with vegetables or even ghee-roasted bananas.

I, on the other hand, buy bread when I am lazy. And make sandwiches for dinner when I am super lazy. TH loves them though and I find them passable for dinner so it's sort of a win-somewhat win situation.

I generally make pretty standard mint chutney sandwiches or guacamole sandwiches but decided to kick it up a notch and try these Avocado Egg Salad Sandwiches. They were delicious, not to mention so flexible and customisable with pretty much whatever you have in hand.

Avocado Egg Salad Sandwich | Egg Sandwich Recipe

Preparation time: 10 minutes
Cooking time: 5 minutes
Makes 4 large sandwiches (serves 2)
Recipe inspired by: Honey What's Cooking

Ingredients:
3 eggs, hard boiled
A small bunch of fresh watercress leaves (or salad spinach)
2-3 stalks of fresh coriander leaves (cilantro)
2-3 stalks of spring onions (or chives or scallions)
1 ripe avocado
A few drops of lemon or lime juice
2 tbsp of any salad dressing or mayonnaise
1 tsp of black pepper powder
1/4 tsp of salt (adjust to taste)
8 slices of bread, edges trimmed
2 tsp of mustard (or butter)

How to make Avocado Egg Salad Sandwich:

1. Wash the watercress leaves well and chop them fine. It's easy to find watercress in Singapore so I used that. if you can't, then use rocket leaves, fresh baby spinach, or any salad green you prefer.

2. Crumble the boiled eggs with a fork.

3. Add the avocado flesh, chopped watercress, coriander, spring onions, salt, and pepper. Mix well.

4. Add the mayo or salad dressing. I used caesar salad dressing.

5. Mix well again, adjust salad dressing or mayo to taste. You can even omit them if you like.

6. Add lemon juice to taste and mix again.

7. Trim the ends off your bread slices and add spread mustard on one side. This is optional, I happened to have some lying around and used it.

Assemble it, and done! We enjoyed this easy egg sandwich for dinner and ended the meal with a glass of milk each.

Grilled Guacamole Cheese Sandwiches Recipe

Both TH and I love Guacamole. We have it with chapati, rice, in sandwiches, and once even with dosa! We have sandwiches for dinner about once or twice a month when I've had a long day at work and I always try to use different fillings. Sometimes I feel I can make a proper dinner with the time I use to plan the filling, I think a lot about what's in the refrigerator that I can use and what flavours should go together.

These sandwiches are similar to the Mint Chutney Cheese Sandwiches that became very popular, but definitely don't taste the same. A great lunchbox or picnic sandwich too!


Grilled Guacamole Cheese Sandwiches Recipe

Makes 4 sandwiches

Ingredients:
1 ripe avocado
2 shallots
2-3 green chillies (or jalapenos)
Some freshly squeezed lime juice
Salt of to taste

To assemble the sandwiches:
8 slices of any bread of your choice
2 tbsp salted butter
4 slices of cheddar cheese (or a mix of cheddar and mozzarella works too)

How to Make Guacamole Cheese Sandwiches

1. Mix and pound all the ingredients for the guacamole in a pestle and mortar or a blender/food processor. I use the pulse mode because I like chunky guacamole.

2. Lightly butter one slice of bread and spread some guacamole on it. Close with another slice and grill in the oven or toaster until golden brown. You can also grill on a stovetop grill if you have one. Alternately, use the sandwich maker - oh my, so many options!

3. Cut into half and serve hot with sriracha or ketchup.

Notes:

- You can use any cheese of choice of even omit it completely.

- My guacamole is not authentic and I don't claim it is. This is the way we like it. I sometimes add half a tomato to it as well but it tends to make it a bit watery. You can also add some coriander leaves to the mix, or even pudina/mint leaves.

- I grilled these sandwiches in my oven on the regular tray that came with it, which explains the marks on the sandwich. I turned the sandwich around after about 3 mins to cook the other side. They get done very quickly so keep an eye on them. Keep temperature at around 160C or so.

Green Mint Chutney & Cheese Sandwiches - Quick & Easy Snack Recipes

Picnic food is fun to make, especially if you are not really going on a picnic but just pretending to on a rainy, weary weeknight. These green chutney and cheese sandwiches are just the thing if you are looking for a quick and easy snack or meal.

About once a month, TH and I have sandwiches for dinner. Its just one of those inexplicable things we do. One of our favourites is always the sandwiches with pudina chutney.

Since I got my mint plant, there's no dearth of fresh mint and I love using fresh herbs in my cooking. Well, don't we all?

This is a quick sandwich recipe that works great for a picnic, tiffin box or even brunch or tea party. It tastes great and is filling too!

Mint Chutney and Cheese Sandwiches (Pudina Chutney Sandwich Recipe)
Makes 4 - Serves 2

Ingredients:
8 slices of bread of your choice
4 slices of cheese

For the Mint Chutney:
A bunch of fresh mint leaves
1/2 cup freshly grated coconut
1 green chilli
1/2 tsp minced garlic (optional)
A pinch of dry ginger powder or 1/2" piece of fresh ginger
Salt to taste

Grind all ingredients together with very little water to a smooth paste.

To assemble and toast the sandwiches: Spread a generous amount of the mint chutney on one side of the bread slice. Top with a slice of cheese and toast in a sandwich maker until done. You can also toast in a pan on the stovetop with a pat of butter until both sides are golden brown and the cheese has melted.
