Sweet & Sour Fish 酸甜老鼠斑 by Helga Soo


Ingredients800g Fish
Some Spring Onions
5 slices of Ginger
3 small Tomatoes
1 tablespoon of Minced Garlics

Sauce
2 tablespoons of Ketchup
1 tablespoon of Dark Caramel Soy Sauce
1 teaspoon of Vinegar
1 tablespoon of Sesame Oil
1 tablespoon of Hua Teow Wine
1 tablespoon of Sugar
1 teaspoon of Corn Starch
Dashes of Pepper
350ml Water

Method
1) Season Fish with some Salt and Pepper, coat Fish with Corn Starch and fry till 80% cooked. Set aside.
2) Heat oil and add Ginger to stir fry for awhile then add Minced Garlics, Tomatoes and Spring Onions and continue to stir fry till fragrant. Pour Sauce and let it boil then add in Fried Fish. Cover and let it simmer for 20 mins. Dish up and serve.
